I usually make corn fritters without a set recipe and sometimes they work and sometimes they don't. Today I followed Donna's recipe almost to the letter. My only change was to replace the original green onion with red onion. These were the best corn fritters I"ve ever made. I served them with a salad of tomato, cucumber and mint and a squeeze of sweet chili sauce. Check out this month's host JenJen for the recipe and entry details.
