I bought a bunch of butter beans at the shops this morning, knowing by the time I arrived home I'd have a plan for them.
YELLOW BEAN AND RED PEPPER SOUP
Soften a chopped onion, garlic and diced potatoes. Toss in the chopped peppers( also called capsicum) and beans. Cover with stock or water. Season.
Cook until tender - about 20 mins.
Blitz in blender.
