TUMERIC SPICE RUB FOR CHICKEN
Crush a couple of cloves of garlic, add a teaspoon each of Maldon salt flakes, tumeric, ginger and chili. Drizzle a little olive oil over and mash together. Butterfly a chicken , make slashes in the thick parts, rub spice all over chicken and into the cuts. Grill or roast as desired. I fan grill in the oven at 220C for 20 minutes, turn grill off and lower temperature to 180C on the fan cycle for a further 40 minutes. I've included the instructions for butterflying chicken but I don't go to all that bother for a family dinner. I just cut the chicken down the middle and spread it out.
Tomorrow I'm taking a few days off to go north. I've typed up the entries that are already in for A Taste Of Yellow . Actually I typed them up twice. During the week our area suffered a major power cut while the file was sitting open on the computer. Although I'd saved it in typepad as I added each entry I lost the lot - about 28 entries at the time.
